After a few days of oatmeal and yogurt combos, this morning I woke up craving eggs. I combined one egg and two egg whites with some chopped asparagus spears from dinner last night and 2% extra sharp cheddar cheese to create this beauty. I love getting vegetables in at breakfast
I had a small piece of the Wild Flour Bakery sourdough on the side. I might have to start making a weekly trip to Headhouse just for this bread!
Today I was planning on an interval run on the high school track near my house (10 x 400 5-K pace), but it’s pouring out so I think I’m declaring today a rest day. I’m heading to New York and am bound to do plenty of walking while there – hopefully around the Union Square Farmers’ Market tomorrow! Plus, I have a date with Central Park on Thursday morning to get my last long run in – 12 miles – before the half on the 29th.
